Ubel Zuiderveld, born in 1962, is the expert on snacks & fastfood in The Netherlands. He was/is editor-in-chief of the leading Dutch tradejournals Snackkoerier [1993-2001] and FoodExpess [until now]. He makes regular appearances in the Dutch media and gives his opinion in newspapers, magazines, on radio and TV.

Of course McDonald's is leading. The most important concepts in the Dutch fastfood [fastservice] market are cafetaria's, snackbars, lunchrooms, QSR's, pizza delivery, icecream shops and grillrooms [döner kebab, shoarma]. A total of about 10.000 outlets, a yearly turnover of about 2 billion euro's. McDonald's takes a quarter of that, having 220 restaurants. Farout the most outlets are run by independent entrepreneurs. There are about hundred chains, soft and full franchise.

Fastfood [snacks in Dutch] that's inspired by the traditional Dutch bakery's [kroket, icecream], Belgians [thicker french fries], Indonesian kitchen [loempia, bamischijf, nasischijf], America's QSR's [hamburgers, milkshake] and industrial snackmakers [popular snacks as frikandel, Mexicano and Berehap].

The face of fastfood [in The Netherlands nowadays referred to as 'fastservice'] is rapidly changing. Steamfryers are hitting the market, 50 percent of the business is using fluid vegetable frying oils. The typical Dutch fastfood is losing market share. Since about 1998 every year the number of snackbars and cafetaria's is declining with about 1 percent.
McDonald's leads the pack [turnover about half a billion], the 5000 Dutch snackbars are representing a turnover of about 850 million euro's. There are hardly any cafetaria's which have a turnover above a million euro's. New concepts are coming up, green is the colour.
